Damper weathers the storm to lick ‘em all on Australia Day

MARY Collis put a damper on Australia Day.

And it was a beauty.

About 2kg in weight, golden brown and steaming hot!

She won the damper competition at Bogangar Public School.

"My damper is more like a great big scone," she told My Daily News.

The member of the Cabarita/Pottsville Lions Club is happy to share her secret.

"I use three cups of flour, one cup of cream, a cup of lemonade and a bit of salt will do the trick," she said.

But it's also in the kneading.

"You've got to get that right and also get that damper shape."

Apparently you have to add a dollop of "long lick" to top it off.

What? You don't know what that is?

It's good old golden syrup!

Most Australia Day events around the Tweed were cancelled, but there was a turnout at the school as awards were presented, games were played and an Aussie Day fashion parade had Tony Mason win the best dressed prize.

Pottsville hosted celebrations, including thong-throwing, damper and Anzac biscuit competitions, while Tumbulgum residents forged through to make the most of Australia Day.
