TWEED residents and visitors to the region will soon be able to enjoy the culinary creations of renowned chef Andy Gimber, who recently received a lot of praise for his efforts on behalf of the 'in' restaurant of today, Chin Chin, in Melbourne.

Mr Gimber will join the ownership team of Mark and Lia Wilson and Lee Middendorf, who took over Casuarina's Bamboo Restaurant following the eatery's closure.

Although the Spice Den is located at the Grand Mercure Santai Resort it is completely independent and will offer a new interpretation of classic Thai street food.

Mr Wilson said "the food Andy Gimber cooks produces a flavour explosion and puts your tastebuds in places they've never been before".

"The theme of the restaurant is sharing and we encourage people to order a number of dishes and share rather than order the traditional entrees and main courses.

"We'll try to make it as accessible as possible and keep the prices down.

The official opening of Spice Den will take place on November 22 and during the run-up, the team behind the restaurant have held a number of events designed to iron out the inevitable teething problems.

A promotion offering residents the opportunity to try some of Mr Gimber's creative innovations at especially attractive prices will soon land in people's mailboxes and owner Mark Wilson encouraged everyone to take him up on his offer.

"In a nutshell, although the tourist season is great, we really value our local customers and aim to create something the entire community can be proud of," Mr Wilson said.
