
Author shares belief in coconuts’ magic
CASUARINA resident Jenni Madison was urged to try coconut oil while suffering health complaints in Thailand.
The result was so good she launched a business, Coconut Magic, based around the versatile coconut, in 2011.
After several years of growing success, Ms Madison has shared many of her coconutty secrets in a new book, The Healthy Coconut.
While her first experience of coconut oil was as a straight shot, the book covers much more than its therapeutic digestive aid.
Alongside recipes galore are tips on how the oil can be used as a beauty product, and for your pets.
“It just takes them through the many, many versatile uses of coconut oil and really cleans out the home to create a toxic-free living environment,” Ms Madison said.
She wants the book to help readers create “beautiful, nutritious meals” without feeling like they’re missing out. It is available online and in stores.

- Despite bad publicity for its high level of saturated fats, coconut oil doesn’t contain the cholestrol of animal-based fats, and is stored in the body as energy, not fat.
