Good oil on cooking seafood
CELEBRATED chef Steven Snow took time out yesterday to teach Serene Living residents the best way to cook the perfect seafood barbecue.
The restaurateur from Fins at Salt had the audience at Tweed Heads Bowls Club eating out of his hands as he revealed his untold secrets to cooking succulent seafood.
"Fresh from the boat is the catch," Mr Snow said.
"With the start of spring there are plenty of awesome jewfish, yellow fin tuna and blue eye trevally around and some giant spanner crabs from Brunswick Heads.
"My advice is to buy the best ingredients you can afford straight from the boats, use less if you have to but do not compromise on quality."
