Malaysia: When only 5-star eating will do

WHEN you open a luxury five-star resort anywhere in the world these days you know that your guests will be seeking much more than just a beautiful place to relax in.

The resort market now demands that if you want to claim elite status the food you offer needs to be simply the best.

With that in mind it was no wonder the St Regis Resort, on the Malaysian island of Langkawi, searched the world for a chef with the highest reputation.

In a coup for St Regis, it managed to coax Michelin star chef David Mottl from the busy streets of St Petersburg to their idyllic paradise.

Mottl is responsible for the smooth running of all culinary offerings at the resort's brilliant over-water specialty restaurant Kayuputi, the signature restaurant L'Orangerie, Gourmand Deli, The Drawing Room, St Regis Bar and Decanter Wine Bar as well as all the resort's banqueting facilities.

Mottl joined the team in Langkawi from his most recent post as the executive sous chef at the W in St Petersburg.

A German national, he brings with him more than 20 years of culinary experience spanning Germany, US, Ireland, Switzerland and most recently Russia, winning awards and accolades.

Since embarking on his culinary career in 1996, Mottl has served in several positions in seven acclaimed Michelin star restaurants.

The well-travelled chef has visited to almost all Asian countries on his mission to uncover the local treats, especially street food. This sets a great groundwork for him to create Asian-inspired haute cuisine at Kayuputi.

Diners will experience his culinary prowess through the combination of much-loved Asian food traditions with contemporary sophistication and modern techniques, the reinterpreting of familiar recipes into sumptuous tapas, inventive mains and reconstructed desserts.

"I trust guests will definitely appreciate the creative array of exceptional Michelin-star quality Asian flavours fused with a Western touch," Mottl said.

His interest in his culinary heritage dates back as far as he can remember. The second of three children, he helped his mother in the kitchen from the age of eight, preparing chocolate pudding and scrambled eggs with fresh mushrooms picked from their family backyard farm.

He believes that only exceptionally fresh ingredients cooked with a dash of love will deliver the best.

"We aim to set the resort to be the best in its class,'' he said.

- The hotel is situated within an idyllic cove with 85 well-appointed suites and four water villas, each boasting a spectacular view of the Straits of Malacca.

- Each guest room has the signature St Regis butler service.

- The resort is approximately a 20-minute drive from Langkawi International Airport.

- Malaysia Airlines flies regularly to Langkawi from Kuala Lumpur. The flight takes 50 minutes.

- It also offers two direct flights to Kuala Lumpur from Sydney. Flight time is around eight hours.
