Twin Towns sells $1 million worth of pizza in a year
HAVING sold more than $1 million worth of pizza in the year since they opened, the people behind Twin Towns' Flame Pizzeria sure know what makes the perfect pizza base.
Executive chef Kim Chilcott said one of Flame's high points was the way customers could see right into the kitchen - there's no hiding around corners for these chefs.
"It's like live theatre," Mr Chilcott said.
"The customers can see the chefs making their pizza as they wait."
What's behind the scenes is just as interesting, with a dedicated dough room hiding some Italian talent.
There, pizza chef Joseph Paterno starts on the foundation for a good pizza: the base.
Mr Chilcott said the perfect pizza was all about consistency.
Before they sold their first one, many types of flours, sauces and toppings were trialled.
"We spent weeks and weeks trialling it.
"We must have cooked at least 100 pizzas before we were happy."
Mr Chilcott said during the process, they trialled about 15 cheeses and just as many varieties of pepperoni.
