Sneaky vege choc cupcakes for fussy little eaters

THIS is not something I would usually write about but I stumbled across a great recipe this week and just had to share.

My four-year-old son is going through a picky-eating stage. All he wants to eat is pasta with butter, strawberries and cream and chocolate. Sigh.

So, I did a search for hidden vege recipes and came across this great one for chocolate cupcakes.

Do you see anything green in these cupcakes? Of course not but in fact there is a whole head of broccoli and half a bag of baby spinach in these babies.

And best of all, my son has no idea! Every time he eats one I feel a little triumphant.

Here is my version of the recipe:

SNEAKY VEGE CHOC CUPCAKES

Ingredients: 2 eggs; ½ c oil or butter; ½ c brown sugar; 1 c grated broccoli; ½ bag of baby spinach; ½ c flour (plain or wholemeal); 3 T cocoa; 1 T milk; and 1 t baking powder.

Method: 1. Whack everything in a food processor and blend. 2. Pour into cupcake liners and cook for 15/20 minutes at 160 degrees. 3. Indulge in a little evil laugh when your loved one eats one and gets a serve of greens without even knowing it!
